Day 1 Sunday

Upon arrival in Toulouse you will be meet by your guide who will transferred you to Chateau de Terre Blanche in Chalabre where you will spend relaxing and memorable stay. After you have settled in to your rooms it would be our pleasure to invite you on to the terrace for a glass of the local sparkling from the nearest appellation, Limoux, which produces some of the best white wines in the region including its sparkling Crémant & Blanquette, and has been doing so since 1531.One hundred and fifty years before Don Perignon in Champagne. You will have time to relax by the pool before dinner or take a short stroll around the garden or the village

Dinner’s at the château are created by our Wchef and all of the ingredients are locally sourced. D

Day 2 Monday

This morning after breakfast we are heading towards the beautiful medieval village of Mirepoix, which holds its fantastic produce market every Monday. Our chef will take you on a tour of this truly wonderful market with its vats of snails cooked in garlic and parsley. Discover all of the locally produced fruit and vegetables including the seasonal wild mushrooms from the local forests.

You will have to help us choose the cheese for tonight dinner. Lunch is in Mirepoix then it will time to head back to Chalabre for some time to relax and enjoy the pool and garden Our chef invites any of you who would like to join him in the kitchen as he prepares tonight’s dinner. Pre-dinner canapés and aperitifs will be served on the Terrace B/D

Day 3 Tuesday

This morning we will be heading of to one of our favourite white wine producers, the Padman family of Château Rives Blanques. Carly who makes the wine with her son Jan Junior, has invited us to spend the morning amongst the vine’s to savour some of the history of the domaine, and to explain how they produce their highly regarded wines. You will also be shown the winemaking facility. Where you will discover why the wines of Limoux are different to other French sparkling wines. Then for the best part of the visit you will be invited to a tasting of the wines. Then after we say au revoir to the Padmans its down the hill to the Village of Limoux for lunch at the hotel Modern Pidgeon.

This afternoons activity is a bit of history,as we will be visiting the abbey of Saint Hilaire . It is believed that the first fermentation of white wine was discovered here by accident. Dinner at the Chateau B/D

Day 4 Wednesday

How can you visit the Languedoc and not visit its most popular attraction? So this morning that is exactly what we are going to do. We are heading to the capitol of the department, Carcassonne, where we have organized a tour of this amazing fortified town. Then for lunch we will head to another historical site that was attacked by the Crusading armies of the Pope. Here we are having lunch at the restaurant of Michelin star chef Jean Marc Boyer. Jean is one of the five Michelin star chefs in the region. After lunch it will be time to discover some more wines of the Languedoc. Dinner to night will be in a local restaurant. B

Day 5 Thursday

Today we are going towards the Med to the old Roman town of Narbonne. With a bit of a personal touch, we have spent years developing relationships with the market stallholders at the covered market Les Halles in the centre of town. You will see and taste all the best that this part of the Languedoc has to offer from its olive’s groves to local poultry and charcuterie, as well as all the local seafood from Port la Nouvelle near Narbonne. After a tour of the market stop at one of the bars and have a glass of the local white wines for your aperitif. Now you should be ready for lunch in one of the many fine restaurants in and around the market. After lunch take a stroll around this historical town with its unfinished Cathedral or look at the via Dominta the original Roman road that has been uncovered. But for all food & wine lovers you must visit the Ferme Narbonnaise owned and run by our good friend Remi. This beautifully presented store has the most amazing produce from the local region as well as from all over the world. This afternoon a stop in the Languedoc appellation of the Clape on the coast and visit the vineyards. Then we will head back and enjoy our fresh seafood from the market Tonight we will have a special guest joining us for dinner. B/D

Day 6 Friday

For our final day of discovery we are heading to the Minervois region which is not only highly regarded for its wines, but also for the black gold that grows in the local bush around the oak trees

As you might guess, it is truffles that have been growing wild here for centuries. Truffles are a lucrative commodity and can be up-to 780 € a kilo. We are going to visit one of the original families of the area who have now started to produce truffle on their Domain Château D’Argeres. The Cro Mayrevielle family have been farming the land here for five generations,They produce Wine ,Truffles and olive oil. Deni and his son Jean Baptiste who has now taken over as the wine maker have given us access to this very special place,How special will become apparent as the day goes on. On our arrival we will visit their truffle field and you will learn about the special relationship between tuber & tree. Then we will learn about the history of the surrounding land and the family’s place in that history. Before lunch we will be invited to see the domaines enormous cave where the wine is produced and stored. Then Mrs Cros Meyrevielle will invite us to the family table for lunch to try the truffles with their wines. Then its back to Chalabre before our final evening together at a very special place for dinner. B

Day 7 Saturday

This morning after breakfast it will be time to say au revoir to your host and Chateau Terre Blanche before you are transferred to the airport or station. B

It’s also possible to be met at Narbonne station.
