Chateau Terre Blanche offers a unique opportunity to Live Like a Local, or at least to live delight in a little luxury at our Chateau while you immerse yourself in with the locals.  Imagine waking up and shopping at the local boulangerie for your morning croissant or learning the secrets of the baguette that has been passed down for generations. Discover the local cuisine with specially selected restaurants that highlight this particular area of France and enjoy  cooking classes with local chefs that will inspire you to show friends and family what you have learned back home. Our Live Like a Local tour is meant to give you a glimpse of everyday life in France. So take your time, relax and delight in the South of France.

Day 1

Upon arrival you will be greeted by your host and taken to the beautiful Medieval village of Chalabre were you will discover Château Terre Blanche .

Once you have settled in to your room you can enjoy a welcome glass of the local sparkling wine from Limoux out on the terrace. Your host will explain what’s planned for your stay in the region. Maybe there is something that you have read about that interests you that’s not on the itinerary? If so just mention it and we will do our best to accommodate your requests. Then relax after your trip before tonight dinner.

For your arrival it would be our pleasure meet you at any of the following transport hubs in the region. The choices are as follows. Carcassonne airport or station, Toulouse airport or station or Narbonne station.

Day 2

This Morning after a continental breakfast, Its time to discover our first local produce market for the week in Mirepoix so named as its the home of the French cuisine term Mirepoix which is finely diced. Mirepoix equal parts of diced celery onion and carrot the base of a lot of French cuisine, The Village is typical of the style of architecture known as Bastides during the middle ages as they needed to be fortified and built to protect the villages from the various threats of the medieval period.

Once we have finished our shopping for the ingredients for tonight’s meal we will have lunch in one of the local restaurants. After lunch its back to Terre Blanche for a cooking class to prepare this evenings three-course dinner. B, D

Day 3

After breakfast today we are heading of to the Minervios Region and to the village of Olonzac with its market on Tuesdays. However, have you ever wondered why the bread in France tastes so good? Well this morning you will get some idea of why. Because we are going to visit the Boulangerie of the family Cortal, who have been making bread in the village for 3 generations. Here you will experience the way that the art of bread making has evolved in France, and why each Boulangerie is different to the next. Then after our visit we will do our daily shopping in the village then head of for a spot of lunch in an ideal setting in the village Minerve the site of one of the largest massacres of the crusades against the Cathars. You will enjoy lunch at Relais Chantovent on its breathtaking terrace with a view over looking the gorge of the river Brain, You will have a tour of the ancient village with its sad history,Then we will make our way back to Terre Blanche were you can relax by the pool before our aperitif and dinner. B, D

Day 4

Food glorious food is today’s activity where will be visiting the old Roman town and its fantastic covered market. Here you will get to see and taste the food of the region: Olives from further down the coast from Narbonne; Seafood just caught that morning from Le port Nouvelle; and maybe some local Charcuterie as well as the local cheeses. Then afterward we can try the local Muscat at one of the bars in the market who also serve lunch for the market workers and the public. You can even buy a steak from one of the many Butchers in the market and they will cook it for you at the bar.
After lunch, we suggest a stroll around Narbonne, which has many fine shops. One of our favorite shops is “La Ferme Narbonnaise” – one of the beautiful epicurean shops in the region. It also has one the best wine selections from the area as well. After Narbonne we will return to the chateau with our fish for the chef to prepare for this evening Dinner. B, D

Day 5

This morning we are heading to the capital of the Aude. Its capital is the Unesco world heritage site le Cite de Carrcassone. Which has always been a point of defence over the century’s from the time of the Galo- Romans to the Visigoths It was finally taken from the Trancavels who where the lords of the Languedoc during the crusades against the Cathars heretics, by the Catholic church in the 11th through to the 15th century finally becoming part of the French Crown in 1659, with the signing of the treaty of the Pyrénées. Our own expert guide will give you a one and half hour tour around the walled cite were you will learn about the history of this amazing place. Then take you for lunch at the Michelin restaurant of our dear friend Jean Marc Boyer in the delightful Village of Lastour. Then you will be off for some wine tasting in the Minervois region before heading back to the château for a swim or maybe even a game of Petanque on the chateau’s court. Light dinner this evening at the château. B, D

Day 6

This morning starts our day of discovery of the local products produced in the region close to Terre Blanche. We are starting our day with a visit to a farm that produces beautiful lilac flowers that have a very precious centre that is very red. Yes its Saffron produced by Eve & Antony at Domaine Massol. This morning you will learn how its cultivated and harvested. Then Anthony will give you a cooking class using the Saffron after which we will sit down for lunch followed on by a visit to a local goats cheese farm Then relax before we travel to the charming local village of Camon were dinner awaits you in the cloister of the Abbey of the villages where you will be greeted by the lovely owners Katie & Peter. B, L

Day 7

This morning after breakfast our driver and host will take  you to your next point of departures
